Here is a local classic. Forever the same, and for that reason pleasing to many, is Sabatini with traditional Tuscan dishes—bistecca alla fiorentina, pappardelle, and rabbit, all decently prepared and served in an elegant yet unpretentious atmosphere. Although Sabatini was for years the most eminent restaurant in the city, it's now equally chic to disdain this high-brow gastronomic institution. The zeitgeist may have moved elsewhere, but the food and service here are still very good.
